
Dear Kids,
I'm sure there's a great story that goes with recipe which I'll have to tell at some point.
For now, let me jumping and provide a run down on how this quick and easy nourishing dish get done.

Ingredients:
1 Organic Roast Chicken
1 Large Onion
2 Carrots
2 stalks of Celery
1 Bunch of Dinosaur Kale (any Healthy Green will do)
4 springs of Fresh Thyme
2 or 3 Bay Leaves
Salt and Pepper
Olive Oil
Kosher Salt
Fresh Pepper
Step 1:
Remove meat from Roast Chicken ( link )
Put the bones in a large pot and add water until bones are covered.
Bring to a boil then turn down to a simmer for 15 minutes.
Strain the bones out and your left with awesome roast chicken broth.
Set Aside.
Step 2:
Chop the onions and celery and Kale, and slice the carrots
In a separate large pot, add enough olive oil to coat the bottom.
Turn heat to medium and fry the onions for 1 min then add rest of vegetables and herbs, salt and pepper to taste.
Step 3:
Pour broth from Step 1 into the veggies and add water to the consistency you want.
Cut Chicken meat from Step 1 into cubes and add to the soup.
Add Salt and Pepper to taste.
Bring to a boil then simmer for 15 minutes.
Serve with Rice or Bread.
